The start of a Meat Lover's Vegetarian Journey
Yep! I have been a lover of all things meaty, however, recently I have had a change of heart; perhaps influenced by my wonderful vegetarian friends and partly empowered by the desire to follow a healthier lifestyle. I certainly feel great afterwards and recently it gave me great joy, cooking up a simple meal for 2 of my dear friends, who happen to be vegetarian. Outcome was even more satisfying - they enjoyed it, so no pizza was ordered that evening :)
Avocado, Cucumber and Cherry tomato salad with a balsamic and extra virgin olive oil (the only oil that contains all the antioxidants and bioactive compounds) vinaigrette with fresh lemon juice. The Health Benefits of these are great, click on them to find out :)
Enjoyed a piece of multi-grain toast with an over-easy egg (fried with olive oil) and accompanied with baby spinach leaves and cherry tomatoes, garnished with slithers of French Brie - delicious and satisfying. Finished off with a sprinkling of black pepper.

Vegan Whole Wheat Tortilla filled with my Eggplant (rich in fiber and antioxidants) Green/Orange Peppers (improves eye health, contains anti-inflammatory properties and more) and Onions Stir-Fry (using Olive Oil) and seasoned with Black Pepper. This is accompanied by the avocado salad and some pitted black olives (high in iron and many other health benefits).

During the week, I have opted for meatless meals, simply but flavourful and nutritious, just like the one below :)
