Meet My Mum and some of her Homemade Creations
Living near my dearest Ma has obvious advantages, one of them is being near to one of the most amazing home cooks on this planet and certainly one of the best in Hong Kong. Lucky me! Mum cooks a variety of wonderful meals, from Chinese to British and sometimes with a natural fusion twist.
In this image, going clockwise, we start with a simple plate of boiled fragrant white rice with stir fried tofu cubes (easily obtainable from most local supermarkets, such as, Wellcome, Fusion, Park n Shop etc.) , assorted vegetables comprising of crunchy snow peas, broccoli and juicy beansprouts with seasoned fresh prawns, finished off with mum's secret sauce; then we have the "Special Mixed Grill": Pork sausages, fried back bacon, sunny side up eggs, a tasty wagyu beef burger with fried onions, beef tomatoes and lovely garden peas; a favourite in the UK until recently, we then have Fish and Chips: seasoned fillet of fish, usually cod, fried in Mum's special beer batter, with homemade chunky chips, broccoli (sometimes with mushy peas) and Hayward's pickled onions (easily available from certain local supermarkets or Great in Harvey Nichols or Citysuper IFC). Featured in this collage we also have the great British Fry Up, comprising of sausages, eggs how you like them (in my case over easy), Smedley's baked beans (these are from the UK and can be found in local supermarkets and are lovely and tomatoey) button mushrooms and unsmoked dutch back bacon - now and again on a Saturday morning after a relaxing lie-in, always hits the spot!
Must give a separate mention to my Mum's ever popular SAUSAGE ROLLS, made with Puff Pastry and stuffed with fresh pork sausage meat, which is seasoned with salt, pepper and certain herbs for that superb flavour.
Followed by a Chinese New Year dish of Chinese 'fragrant' mushrooms (health benefits:long a symbol of longevity and is good against cardiovascular diseases; also known to contain iron which is good for the blood vessels) with Chinese lettuce and black moss (fat choy 髮菜). We also have Stir fried cuttlefish balls with steam broccoli and garnished with chopped red peppers, healthy and tasty. This is followed by a nice piece of juicy steak topped with fried onions, accompanied by crinkle cut fries, lightly fried tomatoes and the much loved broccoli, in a rich beef gravy AAh, Bisto..
Finally, we have another favourite from Mum, is her home-made COLESLAW, pictured last (tangy, creamy and crunchy in a bowl) delicious with salads, in sandwiches or simply eaten on it's own :) ENJOY!
